Method

Base Preparation

  1. 1

    Mix the Dough

In a large mixing bowl, combine the all-purpose flour, salt, and olive oil. Gradually add water and mix until a dough forms.

  2. 2

    Knead the Dough

Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

  3. 3

    Rest the Dough

Cover the dough with a damp cloth and let it rest for 30 minutes.

Filling Preparation

  1. 4

    Cook the Spinach

In a large skillet, heat a little olive oil over medium heat. Add minced garlic and sauté for about 1 minute. Add chopped spinach, cooking until wilted. Remove from heat and let cool.

  2. 5

    Prepare the Filling

In a bowl, combine ricotta cheese, the cooled spinach mixture, nutmeg, Parmesan cheese, and the egg. Mix well until fully combined.

Assembly & Baking

  1. 6

    Roll Out the Dough

After the resting period, roll out the dough on a floured surface to your desired thickness.

  2. 7

    Add the Filling

Cut the rolled-out dough into desired shapes (squares or circles). Place a generous spoonful of the filling in the center of each piece.

  3. 8

    Seal the Dough

Fold the dough over to cover the filling and press the edges firmly to seal.

  4. 9

    Bake the Wheatley

Preheat the oven to 375°F (190°C). Place the filled dough on a baking sheet and bake for 20-25 minutes until golden brown.

Final Touches

  1. 10

    Prepare the Topping

While baking, warm the marinara sauce in a saucepan over medium heat.

  2. 11

    Serve

Once the Wheatley is done baking, remove it from the oven. Top with warmed marinara sauce, sprinkle with shredded mozzarella cheese, and garnish with fresh basil.
