Add the star anise, fennel seeds, sugar, and coffee beans to the spirit mixture. If using a vanilla bean, split it lengthwise and scrape the seeds into the mixture, then add the pod as well.

Stir the mixture gently to dissolve the sugar. Cover the bowl with a lid or plastic wrap and let it sit at room temperature for 1 to 2 weeks. Shake the mixture gently every few days to help the flavors meld.

After 1 to 2 weeks, strain the mixture through a fine mesh strainer or cheesecloth into a clean glass bottle. Discard the solids.
