Cooking the Pasta

    Boil Water

    In a large pot, bring water to a boil. Add a pinch of salt to the water.

    Cook Spaghetti

    Once the water is boiling, add the spaghetti. Cook according to the package instructions until al dente, usually about 8-10 minutes.

    Drain Pasta

    Once cooked, drain the spaghetti in a colander and set aside.

Making the Sauce

    Sauté Garlic

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant.

    Add Vegetables

    Stir in the chopped roasted red pepper, diced tomato, and capers. Cook for about 3-4 minutes until heated through.

    Combine Sauces

    Pour in the marinara sauce and vegetable stock. Stir well to combine and let the mixture simmer for about 5 minutes.

    Add Olive Tapenade

    Mix in the olive tapenade and cook for an additional 2 minutes, allowing the flavors to meld together.

    Finish with Parsley

    Remove the skillet from heat and stir in the chopped parsley. Season with salt and pepper to taste.

Combining and Serving

    Combine Pasta and Sauce

    Add the drained spaghetti to the skillet with the sauce. Toss until the pasta is well coated.

    Plate the vegan puttanesca and garnish with additional parsley if desired. Enjoy!
