Coffee Caviar
Method
Prepare Espresso Mixture
- 1
Brew the Espresso
Brew 1 cup of strong espresso and allow it to cool. Once cooled, stir in 1 tablespoon of spiced rum and 2 tablespoons of sugar until the sugar is fully dissolved.
Make Mascarpone Cream
- 2
Mix Mascarpone Cream
In a large mixing bowl, combine 1 cup of mascarpone cheese, 1 cup of heavy cream, 1 tablespoon of powdered sugar, and 1 teaspoon of vanilla extract. Use an electric mixer to whip until the mixture is smooth and thick.
Assemble Tiramisu
- 3
Layer the Ingredients
Dip each ladyfinger into the espresso mixture quickly (do not soak) and layer them in the bottom of a serving dish. Spread half of the mascarpone cream over the ladyfingers. Repeat the process with another layer of dipped ladyfingers followed by the remaining mascarpone cream.
Prepare Coffee Caviar
- 4
Make Coffee Caviar
In a small saucepan, combine 1 cup of coffee, 1 tablespoon of sugar, and 1 teaspoon of agar-agar. Bring to a boil while stirring constantly. Once boiling, remove from heat and allow to cool slightly. Using a dropper, drop the mixture into a bowl of cold oil to create caviar-like beads. Let them sit for a few minutes to set.
Final Assembly
- 5
Garnish and Serve
Chill the assembled tiramisu in the refrigerator for at least 4 hours. Before serving, dust with 2 tablespoons of cocoa powder and sprinkle with chocolate shavings. Top with the coffee caviar for an elegant finish.
