Method

Preparing the Steak

  1. 1

    Season the Steak

Sprinkle the NY strip steak with salt and black pepper on both sides.

  2. 2

    Cook the Steak

In a skillet, heat the olive oil over medium-high heat. Add the steak and cook for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness. Remove from heat and let the steak rest for 5 minutes before slicing.

Cooking the Eggs

  1. 3

    Prepare the Eggs

In a non-stick skillet, melt the butter over medium heat.

  2. 4

    Fry the Eggs

Crack the eggs into the skillet. Cook to your liking (sunny-side up, over-easy, or scrambled). Season with salt and pepper to taste.

Roasting the Potatoes

  1. 5

    Prepare the Potatoes

Preheat the oven to 425°F (220°C). Cut the baby potatoes in half and place them in a bowl.

  2. 6

    Season and Roast

Drizzle with olive oil, garlic powder, paprika, and salt. Toss to coat. Spread the potatoes on a baking sheet and roast for 20-25 minutes until golden and crispy.

Sautéing the Kale

  1. 7

    Prepare the Kale

In a bowl, combine the kale with olive oil, lemon juice, and salt. Massage the kale for a couple of minutes until it softens.

Making the Vinaigrette

  1. 8

    Combine Ingredients

In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, and salt until well combined.
