Cook the Bucatini
In a large pot of boiling salted water, cook the bucatini according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
Preparing the Sauce

Sauté Garlic and Shallot
In a large skillet over medium heat, add a tablespoon of olive oil. Once hot, add the minced garlic and diced shallot. Sauté until fragrant and translucent, about 2-3 minutes.

Add Shrimp and Seasonings
Add the shrimp to the skillet and sprinkle with Tuscan seasoning. Cook for about 3-4 minutes until the shrimp turn pink.

Incorporate Tomatoes and Kale
Stir in the halved cherry tomatoes and baby kale. Cook for an additional 2-3 minutes until the tomatoes soften and the kale wilts.
Deglazing and Combining

Deglaze with Wine
Pour in the white wine and chicken stock, scraping the bottom of the skillet to deglaze. Bring to a simmer and let cook for 5 minutes.

Combine Pasta and Sauce
Add the cooked bucatini to the skillet. Toss to coat the pasta in the sauce, and then stir in the lemon zest and grated Parmesan cheese. Mix until everything is well combined and heated through.
Garnishing and Serving

Plate the shrimp pasta and garnish with chopped chives and additional Parmesan cheese if desired. Serve hot.
