Method

Preparation

  1. 1

    Prepare the Lemon Herb Aioli

In a small bowl, combine mayonnaise, lemon juice, and dried herbs. Mix well until smooth. Refrigerate until ready to use.

  2. 2

    Prepare the Vegetables

Wash the baby arugula and set aside. Slice the tomato and avocado into thin slices.

Cooking the Salmon

  1. 3

    Season the Salmon

Sprinkle the Tuscan seasoning evenly over both sides of the salmon fillets.

  2. 4

    Sear the Salmon

Heat a skillet over medium-high heat. Add a little olive oil to the skillet. Once hot, add the salmon fillets skin-side down. Cook for about 4-5 minutes, then flip and cook for an additional 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork.

Assembling the Sandwich

  1. 5

    Toast the Ciabatta

Slice the ciabatta buns in half and toast them lightly in the same skillet or a toaster until golden brown.

  2. 6

    Build the Sandwich

Spread a generous amount of the lemon herb aioli on the bottom half of each ciabatta bun. Place the cooked salmon fillet on top, followed by slices of tomato, avocado, and a handful of baby arugula. Top with the other half of the ciabatta bun.

Serving

  1. 7

    Serve

Cut the sandwiches in half if desired, and serve immediately with your favorite side dish.
