Prepare the Oysters

Clean the Oysters
Rinse the fresh oysters under cold water to remove any sand or debris. Scrub the shells with a brush if necessary.

Open the Oysters
Using an oyster knife, carefully open each oyster by inserting the knife into the hinge and twisting to pop it open. Place the opened oysters on a baking sheet.

Season with Beet Salt
Sprinkle a pinch of beet salt on each oyster to enhance the flavor.
Make the Marsala Gratin

Add Marsala Wine
Pour in the Marsala wine and bring to a simmer. Allow it to reduce by half, about 5 minutes.

Incorporate Cream and Cheese
Stir in the heavy cream and Parmesan cheese. Keep stirring until the cheese has melted and the mixture is smooth. Season with freshly ground black pepper to taste.
Assemble and Roast

Top the Oysters
Spoon the Marsala gratin mixture generously over each oyster.

Sprinkle chopped chives and lemon zest on top of the gratin-covered oysters.

Preheat your oven to 450°F (230°C). Place the baking sheet with the topped oysters in the oven and roast for 10-12 minutes, or until the gratin is bubbly and golden brown.
