    Prepare the veal shanks

    Pat the veal shanks dry with a paper towel and season with salt and black pepper on both sides.

    Chop the vegetables

    Dice the carrots, celery, onion, garlic, and tomatoes into small pieces for even cooking.

Cooking

    Sear the veal shanks

    In a large heavy-bottomed pot, heat the olive oil over medium-high heat. Add the veal shanks and sear them on all sides until browned, about 4-5 minutes per side. Remove from the pot and set aside.

    Sauté vegetables

    In the same pot, add the diced onions, carrots, and celery. Cook for about 5 minutes until they begin to soften. Add the garlic and cook for an additional minute.

    Add tomatoes and wine

    Stir in the diced tomatoes and white wine. Bring to a simmer and scrape the bottom of the pot to deglaze, incorporating any browned bits.

    Combine all ingredients

    Return the veal shanks to the pot. Add the beef stock, thyme, bay leaves, and stir to combine. Bring to a simmer.

    Slow cook

    Cover the pot and reduce the heat to low. Cook the osso buco for 2 to 2.5 hours until the meat is tender and falling off the bone.

Serving

    Garnish and serve

    If using, mix parsley and lemon zest to make the gremolata. Serve the osso buco hot, garnished with gremolata and paired with risotto or polenta.
