    Prepare the Fingerling Potatoes

    Wash the fingerling potatoes thoroughly, then slice them in half lengthwise. Place them in a pot of salted water and bring to a boil. Cook for about 10-12 minutes until fork-tender. Drain and set aside.

    Cook the Italian Sausage

    In a skillet over medium heat, add the Italian sausage. Cook for about 5-7 minutes, breaking it apart with a spatula until browned and fully cooked. Set aside.

    Chop the Basil

    Rinse the basil leaves under cold water, pat dry, and chop them coarsely.

    Prepare the Eggs

    Crack the eggs into a bowl, add salt and black pepper, and whisk until well combined.

Cooking the Omelet

    Heat the Skillet

    In the same skillet used for the sausage, add 1 tablespoon of olive oil and heat over medium heat.

    Pour the beaten eggs into the skillet, swirling to cover the bottom evenly. Allow to cook for about 2-3 minutes until the edges start to set.

    Once the eggs are mostly set, add the cooked Italian sausage, marinara sauce, goat cheese, fingerling potatoes, and chopped basil on one half of the omelet.

    Carefully fold the omelet in half over the fillings and let it cook for another 2-3 minutes until the cheese melts and the eggs are fully cooked.
