Method
Preparation of Meat Sauce

Sauté the aromatics
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant, about 5 minutes.

Cook the beef
Add the ground beef to the skillet and cook, breaking it apart with a spoon, until browned, about 7-10 minutes.

Add the tomatoes and seasonings
Stir in the crushed tomatoes, dried oregano, salt, and black pepper. Simmer the sauce on low heat for about 20 minutes, stirring occasionally.
Preparation of House Tomato Sauce

Prepare the tomatoes
Blanch the fresh tomatoes in boiling water for 1 minute, then transfer them to an ice bath. Peel, seed, and chop the tomatoes.

Cook the sauce
Heat 1 tablespoon of olive oil in a saucepan over medium heat. Add the chopped tomatoes, chopped basil, and salt. Cook for about 15 minutes until the sauce thickens.
Preparation of Italian Béchamel

Add the milk
Gradually whisk in the milk, ensuring no lumps form. Cook the mixture, stirring constantly, until it thickens, about 5-7 minutes.

Season the béchamel
Add a pinch of nutmeg and salt to the béchamel sauce and stir to combine. Remove from heat and set aside.
Assembly and Baking

Preheat the oven
Preheat your oven to 180°C (350°F).

Layer the ingredients
In a baking dish, spread a thin layer of meat sauce at the bottom. Place 3 lasagna sheets on top, followed by a layer of house tomato sauce, a layer of béchamel, and a layer of the cheese mixture (ricotta, mozzarella, and parmesan). Repeat the layers until all ingredients are used, finishing with a layer of béchamel and a sprinkle of mozzarella and parmesan on top.

Bake the lasagna
Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbly.

Let the lasagna cool for about 10-15 minutes before slicing and serving. Enjoy!
