    Prepare the Lamb

    Cut the lamb shoulder into large chunks and season with salt and black pepper.

    Chop the Vegetables

    Chop the onion, dice the carrots and celery, and mince the garlic.

Cooking

    Sear the Lamb

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the lamb chunks and sear until browned on all sides, about 8-10 minutes. Remove and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion, carrots, celery, and minced garlic. Sauté until the vegetables are softened, about 5-7 minutes.

    Add Tomato Paste and Wine

    Stir in the tomato paste and cook for 1-2 minutes. Pour in the red wine to deglaze the pot, scraping up any brown bits from the bottom.

    Combine Ingredients

    Return the seared lamb to the pot. Add the crushed canned tomatoes, beef broth, dried oregano, dried thyme, and stir to combine.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer for about 2 hours, or until the lamb is tender and easily shredded.

    Shred the Lamb

    Remove the lamb from the pot and shred it with two forks. Return the shredded lamb to the pot and stir to combine.
