Prep the Beef

Sear the Beef
In a large skillet, heat olive oil over medium-high heat. Add the seasoned sirloin to the skillet and sear for about 2-3 minutes on each side until browned. Remove from heat and set aside.
Prepare the Au Jus

Combine Ingredients
In a pot, combine the beef broth, Worcestershire sauce, and onion powder. Bring to a simmer over medium heat.

Simmer
Allow the broth mixture to simmer for about 10 minutes, stirring occasionally to combine flavors.
Assemble the Hoagies

Prepare the Hoagie Rolls
Slice the hoagie rolls lengthwise without cutting all the way through. Open them up gently.

Fill the Rolls
Layer the seared sliced sirloin inside each hoagie roll. Top with spicy giardiniera and pepperoncini peppers according to your taste.

Serve with Au Jus
Serve the assembled hoagies with the hot au jus on the side for dipping.
