Mashing Process

    Prepare the Mash

    In a large mash tun, combine corn, rye, and malted barley. Heat the water to about 70°C (158°F) and pour it over the grains. Stir well to ensure all grains are saturated.

    Allow the mash to rest for 60 minutes at 65°C (149°F). This will help convert the starches in the grains into fermentable sugars.

    Drain the Mash

    After resting, drain the liquid (wort) from the mash tun into a kettle, leaving the solid grains behind.

Fermentation Process

    Cool the Wort

    Cool the drained wort to around 20°C (68°F) using a wort chiller or an ice bath.

    Add Yeast and Sugar

    Once cooled, add the yeast and sugar to the wort. Stir gently to incorporate.

    Transfer the mixture to a fermentation vessel with an airlock. Allow it to ferment for about 7-10 days at a stable temperature of around 20°C (68°F).

Bottling and Aging

    Bottle the Spirit

    Once fermentation is complete, siphon the liquid into clean bottles, leaving some space at the top.

    Seal the bottles and store them in a cool, dark place. Allow the spirit to age for at least 6 months for optimal flavor development.
