Bechamel Sauce Preparation

    Make the Roux

    In a medium saucepan, melt the butter over medium heat. Once melted, add the flour and whisk continuously for about 2 minutes until the mixture is smooth and bubbly but not browned.

    Add Milk

    Gradually add the milk, whisking constantly to prevent lumps. Continue to cook and stir until the sauce thickens, about 5-7 minutes.

    Season the Sauce

    Add salt and nutmeg to the sauce, stirring to combine. Remove from heat and set aside.

Mushroom Medley Preparation

    Sauté the Mushrooms

    In a large skillet, heat the olive oil over medium-high heat. Add the mixed mushrooms and cook for about 5 minutes until they begin to soften.

    Add Garlic and Season

    Stir in the minced garlic, salt, and black pepper. Cook for an additional 3-4 minutes until the mushrooms are fully cooked and fragrant. Remove from heat.

Assembly

    Combine Ingredients

    In a large bowl, combine the sautéed mushrooms with the prepared bechamel sauce and mix well.

    Prepare the Kale

    In a separate bowl, massage the chopped kale with a little bit of olive oil and a pinch of salt until it softens.

    In a baking dish, layer the mushroom and bechamel mixture, followed by a layer of massaged kale, pickled onions, and finally the shredded mozzarella cheese.
