Preparing the Custard

    Melt the Chocolate

    Chop the dark chocolate into small pieces and place it in a heatproof bowl. Set it over a saucepan of simmering water (double boiler) and stir until melted. Remove from heat and let it cool slightly.

    Heat the Cream

    In a saucepan, heat the heavy cream over medium heat until it begins to steam, but do not let it boil. Remove from heat.

    Whisk the Egg Yolks

    In a mixing bowl, whisk together the egg yolks, granulated sugar, and vanilla extract until the mixture is pale and slightly thickened.

    Combine Mixtures

    Gradually pour the hot cream into the egg yolk mixture, whisking constantly to temper the eggs. Add the melted chocolate and espresso, mixing until smooth.

    Strain the Mixture

    Strain the custard mixture through a fine mesh sieve into another bowl to remove any lumps.

Baking the Custards

    Prepare Ramekins

    Preheat your oven to 325°F (160°C). Place 6 ramekins in a baking dish. Pour the chocolate custard mixture into the ramekins, filling them about 3/4 full.

    Create a Water Bath

    Carefully pour hot water into the baking dish around the ramekins until it reaches halfway up the sides of the ramekins.

    Bake

    Bake in the preheated oven for 25-30 minutes, or until the edges are set but the centers remain slightly jiggly. Remove from the oven and let cool in the water bath for about 10 minutes, then remove the ramekins and chill in the refrigerator for at least 2 hours, or overnight.

Caramelizing the Sugar

    Prepare for Caramelizing

    Once the custards are chilled, sprinkle about 1 tablespoon of granulated sugar evenly over the top of each custard.

    Caramelize the Sugar

    Using a kitchen torch, carefully melt and caramelize the sugar until it forms a crispy, golden crust. Alternatively, you can place the ramekins under the broiler for 2-3 minutes, watching closely to avoid burning.

Serving

    Garnish and Serve

    Let the caramelized sugar cool for a minute to harden. Garnish the chocolate crème brûlée with fresh berries before serving.
