Chicken Preparation
- 1
Prepare the Chicken
Preheat the oven to 375°F (190°C). Season the chicken breasts with salt and black pepper. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with grated Parmesan cheese.
- 2
Bread the Chicken
Dredge each chicken breast in flour, shaking off the excess. Dip into the beaten eggs, then coat with the breadcrumb mixture, pressing gently to adhere.
- 3
Fry the Chicken
In a large skillet, heat the olive oil over medium heat. Fry the breaded chicken breasts for about 4-5 minutes on each side until golden brown. Remove and place on a baking sheet.
Marinara Sauce Preparation
- 4
Cook the Marinara
In a saucepan, heat the olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Stir in the crushed tomatoes, dried basil, dried oregano, salt, black pepper, and sugar. Simmer for 15-20 minutes, stirring occasionally.
Spaghetti Preparation
- 5
Cook the Spaghetti
In a large pot of boiling salted water, add the spaghetti and cook according to package instructions until al dente. Drain and set aside.
Assembly
- 6
Assemble Chicken Parmesan
Pour some marinara sauce over each fried chicken breast, then top with mozzarella cheese and a sprinkle of grated Parmesan. Bake in the preheated oven for 20 minutes or until the cheese is melted and bubbly.
- 7
Serve
Serve the chicken parmesan over a bed of spaghetti, topped with additional marinara sauce and a sprinkle of fresh basil if desired.
