Method

Preparation of the Base

  1. 1

    Combine Base Ingredients

In a large glass jar or container, combine the neutral grain spirit and water. Stir gently to mix.

Infusion of Botanicals

  1. 2

    Add Botanicals

Add all dried botanicals (orange peel, wormwood, gentian root, chamomile flowers, coriander seeds, cardamom pods, cinnamon stick, thyme, juniper berries) into the jar with the base mixture.

  2. 3

    Seal and Shake

Seal the jar tightly and shake gently to ensure the botanicals are fully submerged. Let sit in a cool, dark place for 2 weeks, shaking the jar gently every few days.

Sweetening and Flavoring

  1. 4

    Add Sugar

After 2 weeks, strain the mixture through a fine mesh sieve or cheesecloth to remove the solids. Return the liquid to the jar and add sugar, stirring until fully dissolved.

  2. 5

    Add Flavor Enhancers

Stir in the vanilla extract and caramel color (if using) to enhance the flavor and color of the amaro.

Bottling

  1. 6

    Bottle the Amaro

Using a funnel, pour the finished amaro into clean, sterilized bottles. Seal tightly and label the bottles.

  2. 7

    Aging

Allow the bottled amaro to age for at least another month before consuming for best flavor.
