    Prepare the Salsa Verde

    In a bowl, combine diced heirloom tomatoes and chopped fresh basil. Drizzle with olive oil, and season with salt and black pepper. Mix well and set aside.

    Bread the Swordfish

    Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Season the swordfish with salt and pepper. Dredge each fillet in flour, then dip in the egg, and finally coat with breadcrumbs.

    Cook the Swordfish

    In a skillet, heat olive oil over medium heat. Add the breaded swordfish fillets and cook for about 3-4 minutes on each side, or until golden brown and cooked through. Remove and let drain on paper towels.

    Slice the buns and layer with arugula, the cooked swordfish, and a generous spoonful of the heirloom tomato and basil salsa verde. Top with the other half of the bun.
