1. Prepare the Passionfruit
Cut the passionfruits in half and scoop the pulp into a bowl. Set aside.
2. Make the Syrup
In a small saucepan, combine water and sugar. Bring to a boil over medium heat, stirring until sugar dissolves. Remove from heat and let cool.
3. Mix Ingredients
In a mixing bowl, combine the passionfruit pulp, lime juice, and the cooled syrup. Mix well.
4. Serve
In a coupe glass, add ice cubes and pour the passionfruit mixture over the ice. Garnish with mint leaves.
