Prepare Ingredients

    If using a fresh young coconut, crack it open and strain 2 cups of coconut water into a measuring cup. Scoop approximately 1 cup of the soft coconut meat. If using canned coconut meat, drain any excess liquid.

    Toast shredded coconut (optional): place 1 tsp shredded coconut in a small dry skillet over medium heat. Stir constantly 1–2 minutes until light golden and fragrant. Transfer to a plate to cool.

Blend Vita Coco

    Combine

    In a blender add 2 cups coconut water, 1 cup coconut meat, 1 cup ice, 1 tablespoon maple syrup (or agave), 1 teaspoon fresh lime juice, a pinch of fine sea salt, and 1/4 tsp vanilla extract (if using). If adding protein powder, include it now.

    Blend

    Blend on high for 30–60 seconds until the mixture is smooth, slightly frothy and the coconut meat is fully incorporated. Pause and scrape down the sides if necessary.

    Taste and Adjust

    Taste the drink and adjust sweetness or acidity: add up to 1 more teaspoon maple/agave for sweetness or another 1/2 tsp lime juice for brightness. If too thick, add 2–4 tablespoons extra coconut water and blend briefly.

Serve

    Pour the blended Vita Coco into two chilled glasses (about 12–14 oz total).

    Garnish each glass with toasted shredded coconut and/or a sprig of fresh mint. Serve immediately with a straw.
