    Build and Muddle

    Place the fresh mint leaves and simple syrup into a mixing glass or the serving glass. Gently muddle the mint 4–6 times — just enough to bruise the leaves and release aromatic oils without shredding them. This will create a fresh mint aroma without bitterness.

    Add Spirits and Acid

    Add 2 oz Jameson Irish Whiskey and 0.5 oz fresh lime juice to the glass with the muddled mint and simple syrup. Add 2 dashes of Angostura bitters.

    Add Ice and Mix

    Fill the glass with crushed ice (about 1 cup). Using a long bar spoon, stir the mixture gently for 10–15 seconds to chill and slightly dilute the drink and to distribute the mint and bitters.

    Top and Garnish

    Top the drink with approximately 1.5 oz club soda (adjust to taste) and give one gentle stir to combine. Garnish with a lime wheel or wedge on the rim and a fresh mint sprig slapped once between your palms (to release oils) and placed on top.

    Serve immediately with a short straw or stirring stick so the drink can be re-stirred as it dilutes. Note: Adjust simple syrup or lime to taste for sweetness/acidity balance. For a stronger mint presence, lightly clap an extra few mint leaves over the glass before garnishing.
