- 1
Chill glass
Place a highball or large wine glass in the freezer for 5–10 minutes, or fill it with ice water while you prepare other items to ensure the drink stays cold longer.
- 2
Prepare lime
Roll the fresh lime firmly on the countertop under your palm to release juices. Cut half a lime: use one thin wheel or wedge for garnish and reserve the other half for squeezing 1/2 lime (about 0.5 oz / 15 ml) over the finished drink if desired.

- 4
Pour gin
Measure and pour 2 oz Bar Hill gin over the ice. Pour gently down the side of the glass to preserve carbonation when you later add tonic.

- 6
Brighten with lime
Squeeze the reserved half-lime lightly over the drink to add a bright citrus note (optional). Drop the squeezed wedge or a thin lime wheel into the glass as garnish.
- 7
Finish with herb (optional)
If using rosemary, slap the sprig gently between your palms to release aromatics and lay it on top of the drink or rest it on the rim. This adds a complementary herbal aroma to the Bar Hill botanicals.

Serve
Serve immediately with a short stirring motion (1–2 gentle turns) if you prefer slightly mixed layers. Provide a straw or stirrer and advise guests to sip and enjoy while the tonic is still effervescent.
