    Boil the Potatoes

    Peel and chop the potatoes into chunks. Place them in a pot, cover with water, and bring to a boil. Cook for about 15-20 minutes, or until tender. Drain and let cool slightly.

    Roast the Garlic

    While the potatoes are cooking, roast the garlic. Preheat your oven to 400°F (200°C). Slice the top off a head of garlic, drizzle with olive oil, wrap in foil, and roast for about 30-35 minutes until soft.

    Char the Scallions

    Heat a grill or skillet over high heat. Toss the scallions with a little olive oil and cook until charred on all sides, about 3-5 minutes. Remove from heat and chop finely.

    Combine Ingredients

    In a large bowl, mash the boiled potatoes and roasted garlic together. Add in the charred scallions, olive oil, lemon juice, salt, and black pepper. Mix until smooth and creamy.

    Adjust Seasoning

    Taste the Skordalia and adjust the seasoning with more salt, pepper, or lemon juice if needed.

    Transfer the Skordalia to a serving dish. Drizzle with extra olive oil and serve with crusty bread or as a dip.
