    Prepare the Ham

    Preheat the oven to 325°F (165°C). Score the surface of the ham in a diamond pattern and place it in a roasting pan.

    Make the Glaze

    In a saucepan, combine honey, brown sugar, Dijon mustard, smoked paprika, garlic powder, black pepper, and apple cider vinegar. Heat over medium heat until the sugar dissolves and the mixture is smooth.

    Glaze the Ham

    Pour half of the glaze over the ham, brushing it into the scored sections. Reserve the other half for later.

    Add Water

    Pour water into the bottom of the roasting pan to create steam during cooking.

    Smoke the Ham

    If using a smoker, add wood chips to the smoker. Place the ham in the smoker and smoke for about 3 hours, basting with the reserved glaze every hour. If using an oven, cover the ham with foil and bake for about 1.5 hours.

    Finish and Serve

    Remove the ham from the oven or smoker, glaze one final time, and let it rest for 15 minutes before slicing and serving.
