Directions
Preheat your oven to 350°F (175°C). In a bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
Cream the Butter and Sugars
In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, followed by the vanilla extract. Mix well.
Combine Dry and Wet Ingredients
Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.
Drop tablespoon-sized dollops of the batter onto lined baking sheets, about 2 inches apart. Bake for 10-12 minutes or until the edges are set. Allow to cool completely.
Make the Filling
In a separate bowl, whip the heavy cream until soft peaks form. Gradually add confectioners' sugar and continue whipping until stiff peaks form.
Assemble the Whoopie Pies
Spread a generous amount of the whipped filling on the flat side of one cookie and top with another cookie, flat side down. Repeat with remaining cookies.
Serve with Shaved Chocolate
Serve the whoopie pies with shaved bittersweet chocolate sprinkled on top, or alongside a malted vanilla milkshake.
