    Prepare the Sirloin Steak

    Season the sirloin steak with smoked paprika, salt, and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the steak for 4-5 minutes on each side for medium-rare. Remove from heat and let it rest for 5 minutes before slicing.

    Caramelize the Onions

    In the same skillet, add sliced onions and cook over medium heat, stirring occasionally, until they are golden brown and soft, about 10-15 minutes. Set aside.

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide the eggs into the simmering water. Poach for about 3-4 minutes or until the whites are set and yolks are still runny. Remove with a slotted spoon and drain on paper towels.

    Slice the English muffins in half and toast them until golden brown.
