    Prepare the Steak

    Remove the steak from the refrigerator and let it sit at room temperature for at least 30 minutes before cooking.

    Season the Steak

    Pat the steak dry with paper towels. Rub both sides with olive oil, and season generously with salt and black pepper.

    Heat the Pan

    Heat a cast-iron skillet or grill pan over high heat until it is very hot.

    Sear the Steak

    Place the steak in the hot pan. Sear for about 4-5 minutes on one side, until a nice crust forms. Flip the steak.

    Add Aromatics

    After flipping, add garlic cloves (smashed) and fresh rosemary to the pan. Cook for an additional 4-5 minutes for medium-rare, basting the steak with the pan juices.

    Check Doneness

    Use a meat thermometer to check the internal temperature. For medium-rare, it should read 130°F (54°C).

    Rest the Steak

    Remove the steak from the pan and let it rest for 5-10 minutes before slicing to allow juices to redistribute.

    Slice against the grain and serve immediately.
