    Prepare the Onions

    Slice the yellow onions thinly. In a large pot, melt the butter and olive oil over medium heat. Add the onions and cook, stirring occasionally, until they become caramelized and golden brown, about 30-40 minutes.

    Add Garlic and Flour

    Add the minced garlic to the onions and cook for an additional 1-2 minutes. Sprinkle in the flour and stir well to combine. Cook for another 2 minutes to remove the raw flour taste.

    Add Broth and Wine

    Gradually pour in the beef broth and Madeira wine, stirring constantly to avoid lumps. Add the thyme, bay leaf, salt, and pepper. Bring the soup to a simmer, then reduce the heat to low and let it cook for 20-30 minutes.

    Prepare the Bread

    While the soup is simmering, preheat the oven to 350°F (175°C). Place the baguette slices on a baking sheet and toast in the oven until golden brown, about 10 minutes.

    Serve the Soup

    Remove the bay leaf from the soup. Ladle the soup into bowls, top with toasted baguette slices, and sprinkle the grated Gruyère cheese on top. Place the bowls under the broiler for a few minutes until the cheese is bubbly and golden.
