    Take the filet mignon out of the refrigerator and let it sit at room temperature for about 30 minutes prior to cooking. This ensures even cooking.

    Pat the filet dry with paper towels. Season generously with salt and black pepper on both sides.

    Heat the Pan

    In a skillet, heat the olive oil over medium-high heat until it shimmers. Ensure the pan is hot before adding the steak.

    Cook the Filet

    Place the seasoned filet in the hot skillet and sear for about 3-4 minutes on one side without moving it. Flip the filet and add the garlic cloves and fresh rosemary to the pan.

    Cook for an additional 3-4 minutes for medium-rare, or longer if you prefer it more done. Baste the steak with the oil and juices in the pan while cooking.
