Method

Preparation of Fish

  1. 1

    Prep the Branzino

Clean the branzino, removing any scales and innards. Rinse under cold water and pat dry. Score the skin on both sides with shallow cuts and rub with olive oil, salt, and pepper.

  2. 2

    Stuff the Fish

Stuff each branzino with lemon slices and parsley.

Crispy Artichokes

  1. 3

    Prepare the Artichokes

Drain and rinse the canned artichoke hearts. Pat them dry with a paper towel.

  2. 4

    Breading Process

Set up a breading station with flour, a beaten egg, and breadcrumbs. Dredge each artichoke heart in flour, dip into egg, then coat with breadcrumbs.

  3. 5

    Fry the Artichokes

In a large skillet, heat oil over medium-high heat. Fry the breaded artichokes until golden brown and crispy, about 3-4 minutes. Drain on paper towels.

Salsa Verde

  1. 6

    Make the Salsa Verde

In a food processor, combine parsley, garlic, capers, olive oil, and lemon juice. Blend until smooth. Adjust seasoning with salt to taste.

Grilling the Fish

  1. 7

    Grill the Branzino

Preheat the grill to medium-high. Place the branzino on the grill and cook for about 5-7 minutes on each side, or until the flesh is opaque and flakes easily with a fork.

Serving

  1. 8

    Plate and Serve

Serve the grilled branzino alongside crispy artichokes and drizzle with salsa verde. Garnish with additional parsley if desired.
