Method

Preparation

1

Sauté the Base

In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, red bell pepper, and celery. Sauté until the vegetables are soft, about 5-7 minutes.

2

Add Liquids

Stir in the crushed tomatoes, fish stock, and red wine. Bring the mixture to a simmer.

3

Season the Broth

Add the dried oregano, crushed red pepper flakes, salt, and black pepper. Adjust the seasoning to taste and let simmer for an additional 10 minutes.

4

Add Seafood

Gently add the monkfish fillets and tiger prawns to the pot. Cook for about 5-7 minutes until the seafood is cooked through.

5

Finish with Crab and Parsley

Finally, add the crab meat and chopped parsley, stirring gently. Cook for another 2-3 minutes until heated through.
