Doughnut Preparation

Make the Dough

In a bowl, combine warm milk and sugar, then add yeast and let it sit for 5-10 minutes until foamy. In a large mixing bowl, combine flour and salt. Add the yeast mixture, melted butter, eggs, and vanilla. Knead until smooth, then let it rise in a warm place until doubled in size (about 1 hour).

Shape the Doughnuts

Once risen, roll out the dough to about 1/2 inch thickness. Use a doughnut cutter to cut out shapes. Let them rise for another 30 minutes.

Fry the Doughnuts

Heat vegetable oil in a deep pan to 350°F (175°C). Fry doughnuts until golden, about 1-2 minutes per side. Drain on paper towels.

Filling Preparation

Prepare Raspberry Filling

In a saucepan, combine raspberries, sugar, cornstarch, and lemon juice. Cook over medium heat until thickened, then cool.

Prepare Boston Cream Filling

Whisk together heavy cream, pudding mix, and milk in a bowl until smooth. Chill until ready to use.

Glaze Preparation

Make the Salted Vanilla Glaze

In a bowl, combine powdered sugar, milk, vanilla extract, and salt. Whisk until smooth.

Assembly

Fill and Glaze the Doughnuts

Using a piping bag, fill half the doughnuts with raspberry filling and the other half with Boston cream filling. Dip the tops into the salted vanilla glaze.
