1. Prepare the Ingredients
Wash the spinach thoroughly and chop it coarsely. Crumble the Bulgarian feta cheese and set aside.
2. Whisk the Eggs
In a bowl, crack the farm eggs and whisk them together with salt and black pepper until well combined.
3. Sauté the Spinach
In a non-stick skillet, heat the olive oil over medium heat. Add the chopped spinach and sauté for about 2-3 minutes until wilted.
4. Add Eggs to the Skillet
Pour the whisked eggs over the sautéed spinach in the skillet. Allow the eggs to cook undisturbed for about 2 minutes until the edges begin to set.
5. Add Feta and Finish Cooking
Sprinkle the crumbled feta cheese over the eggs. Continue cooking for another 2-3 minutes until the eggs are fully set. You can cover the skillet with a lid to help the eggs cook through.
6. Serve
Once the omelette is cooked through, gently slide it onto a plate. Serve hot with a side of mixed greens.
