    Prepare the Ice Cream Base

    In a medium saucepan, combine the heavy cream, whole milk, and sugar. Cook over medium heat, stirring until the sugar dissolves.

    Mix Egg Yolks

    In a bowl, whisk the egg yolks. Slowly add a cup of the warm cream mixture to the yolks, whisking constantly to temper the eggs.

    Combine and Heat

    Pour the egg yolk mixture back into the saucepan, and cook over low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon (about 170°F).

    Chill the Mixture

    Remove from heat, stir in vanilla extract and a pinch of salt. Pour the mixture into a bowl, cover, and refrigerate until completely chilled (at least 4 hours or overnight).

    Churn the Ice Cream

    Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions. Transfer to a lidded container and freeze until firm.

Sorbet

    Prepare the Fruit

    If using whole fruit, wash and chop it into small pieces. Blend the fruit in a food processor until smooth.

    Create the Syrup

    In a saucepan, combine water and sugar. Bring to a boil, stirring until the sugar dissolves. Remove from heat and let it cool.

    Mix Together

    Combine the fruit puree with the cooled syrup and lemon juice. Mix well.

    Refrigerate the mixture until cold, about 1 hour.
