Preparation

    Roast the Garlic

    Preheat your oven to 200°C (400°F). Cut the top off the garlic head to expose the cloves, drizzle with olive oil, and wrap in foil. Roast for 30-35 minutes until caramelized.

    Prepare the Porcelet

    Rub the porcelet with salt and black pepper, ensuring the seasoning penetrates the skin. Score the skin in a crosshatch pattern for better crackling.

Cooking

    Roast the Porcelet

    Place the prepared porcelet in a roasting pan and roast in the oven at 180°C (350°F) for approximately 2 hours, or until the internal temperature reaches 70°C (160°F) and the skin is crispy.

    Prepare the Vinaigrette

    In a bowl, whisk together the Dijon mustard, olive oil, red wine vinegar, and roasted garlic (squeezed out of its skin) until emulsified.

    Sauté the Peppers

    Slice the Jimmy Nardello peppers and sauté them in a pan with a little olive oil over medium heat until soft and slightly charred.

Serving

    Plate the Dish

    Slice the roasted porcelet and serve on a platter topped with sautéed peppers, pickled nectarines, and drizzle with the Dijon vinaigrette.
