Marinade Preparation
Prepare the Marinade
In a medium bowl, whisk together the olive oil, apple cider vinegar, Carolina barbecue sauce, minced garlic, smoked paprika, salt, and black pepper until well combined.
Marinate the Chicken
Cut the boneless skinless chicken breasts into 1-inch cubes and place them in a large resealable bag. Pour the marinade over the chicken, seal the bag, and toss to coat. Refrigerate for at least 1 hour, or ideally overnight for maximum flavor.
Skewering and Grilling
Prepare the Vegetables
While the chicken is marinating, wash and cut the bell peppers, red onion, and zucchini into appropriate sizes for skewering.
Soak the Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
Assemble the Skewers
Thread the marinated chicken cubes onto the skewers, alternating with chunks of bell peppers, red onion, and zucchini until the skewers are filled.
Preheat the Grill
Preheat your grill to medium-high heat (about 375°F to 400°F).
Grill the Skewers
Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F.
