Rinse and hull
Rinse the strawberries under cold running water in a colander. Pat them dry gently with paper towels. Using a small paring knife or a strawberry huller, remove the green stems and hulls. Trim any bruised spots and halve or quarter strawberries so pieces are roughly uniform (halves for medium berries, quarters for large).

Macerate
Place the prepared strawberries into a medium bowl. Sprinkle the granulated sugar evenly over the berries. Add the lemon juice and vanilla extract. Gently toss with a rubber spatula or spoon to coat all pieces. Let the mixture sit at room temperature for 15–25 minutes, tossing once or twice. The sugar will draw out juices and create a fragrant syrup.

Adjust sweetness
After macerating, taste the syrup and berries. If you prefer sweeter strawberries, add up to 1 additional tablespoon of sugar and gently stir until dissolved. If too sweet, add a few drops more lemon juice to balance. Chill briefly (10–15 minutes) if you want them cold before serving.

Serve
Spoon the macerated strawberries and their syrup into bowls or over shortcakes, pancakes, or yogurt. If using cream, lightly whip the heavy cream to soft peaks or simply spoon thick vanilla yogurt on top.

Garnish
Garnish each serving with a few fresh mint leaves. Optionally sprinkle a pinch of coarse sugar for sparkle or a tiny grind of black pepper to add a subtle contrast.

Storage
Store leftover macerated strawberries in an airtight container in the refrigerator for up to 3 days. Stir before serving; the strawberries will release more liquid over time.
