    Prepare and preheat

    Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment; grease parchment as well. Let butter soften to room temperature if not already soft.

    Whisk dry ingredients: In a medium bowl, whisk together 2.25 cups flour, 1.5 cups granulated sugar, 2.5 tsp baking powder and 0.5 tsp salt until evenly combined.

    Cream butter and some sugar: In a large bowl or stand mixer fitted with paddle attachment, beat 0.5 cup softened butter on medium speed 1 minute until smooth. Add half (about 3/4 cup) of the sugar mixture and beat 1–2 minutes until pale and slightly fluffy.

    Add eggs and vanilla: Add the 3 large eggs one at a time, beating briefly after each until incorporated. Mix in 2 tsp vanilla extract.

    Alternate dry and wet: Reduce mixer speed to low. Add the dry ingredients in three additions, alternating with 1 cup whole milk (begin and end with dry). Mix just until combined after each addition; avoid overmixing.

    Bake: Divide batter evenly between prepared pans (about 1.5–1.75 cups batter per pan). Smooth tops and bake in preheated oven 22–26 minutes, or until a toothpick inserted in center comes out with a few moist crumbs and tops are lightly golden.

    Cool: Let cakes cool in pans 10 minutes, then run a knife around edges and invert onto wire racks. Remove parchment and cool completely before assembling (about 1 hour).

Flouncy Filling (Light Mousse)

    Bloom gelatin: Sprinkle 1 tsp unflavored gelatin over 2 tbsp cold water in a small heatproof bowl. Let stand 5 minutes to bloom. Then heat gently (microwave 10–12 seconds or place over barely simmering water) until dissolved; do not boil. Set aside to cool slightly but keep liquid.

    Beat cream cheese: In a medium bowl, beat 6 oz softened cream cheese with 0.75 cup powdered sugar, 1 tsp vanilla extract and 1 tsp lemon zest until smooth and no lumps remain.

    Whip cream: In a chilled bowl with chilled whisk/beaters, whip 1.5 cups chilled heavy cream to soft-medium peaks.

    Incorporate gelatin: With the mixer running on low, drizzle the slightly cooled gelatin into the cream cheese mixture and mix until evenly combined.

    Fold whipped cream: Fold one-third of the whipped cream into the cream cheese mixture to loosen it, then gently fold in the remaining whipped cream until fully combined and airy. Cover and refrigerate 15–20 minutes to set slightly; it should be light and still spreadable.

Simple Syrup

    Make syrup: In a small saucepan, combine 1/4 cup granulated sugar and 1/4 cup water. Heat over medium, stirring until sugar dissolves. Remove from heat and stir in 1/2 tsp vanilla if using. Let cool to room temperature.

Assembly & Finish

    Level and layer: If cake domes formed, level tops with a serrated knife so layers sit flat. Place first cake layer on serving plate or cake turntable.

    Brush with syrup: Lightly brush the top of the bottom layer with simple syrup (about 2–3 tbsp) to add moisture.

    Spread filling: Spoon or pipe about half of the flouncy filling onto the bottom layer and spread to the edges with an offset spatula, leaving a small rim so filling doesn't ooze out.

    Second layer and finish: Place second cake layer on top, press gently to adhere. Use remaining filling to frost the top (and optionally the sides) in a light, airy coat—this is intentionally soft and flouncy rather than firm. Chill 20–30 minutes to let mousse set.

    Garnish and serve: Dust the top with confectioners' sugar, arrange fresh berries or citrus slices if desired. For clean slices, chill at least 30 minutes longer and slice with a hot, dry knife (wipe between cuts).
