Coconut Layer

    Prepare coconut

    If using a whole coconut, remove the shell and brown skin and finely shred or grate the fresh coconut meat until you have about 2 cups. If using packaged fresh/shredded coconut, measure 2 cups and proceed.

    Combine base liquids

    In a medium saucepan, combine 1 cup unsweetened coconut milk, 3 tablespoons sweetened condensed milk, and 2 tablespoons granulated sugar. Whisk to dissolve the sugar and smooth the condensed milk into the coconut milk.

    Cook coconut mixture

    Add the 2 cups grated coconut, 1 tablespoon unsalted butter, and 1 teaspoon fine sea salt to the saucepan. Place over medium heat and bring to a gentle simmer, stirring frequently to prevent sticking. Simmer for 8–10 minutes, stirring every 30 seconds, until the mixture thickens slightly and becomes glossy but still moist. Reduce heat if it begins to brown too quickly.

    Finish and flavor

    Remove the pan from heat and stir in 1 teaspoon vanilla extract. Taste and adjust sweetness with an additional tablespoon sugar or condensed milk if you prefer sweeter. Let the mixture cool for 10 minutes—it will firm up as it cools.

    Portion

    Spoon the warm coconut mixture into small serving bowls or ramekins (about six 1/2-cup portions) or spread into a shallow dish if you plan to cut portions later. Smooth the tops with a spatula.

Coconut Crisp Topping (optional)

    While the coconut layer cools, preheat a small skillet over medium heat. Add 1 cup toasted shredded coconut (or place 1 cup raw shredded coconut in the dry skillet) and toast, stirring constantly, for 3–5 minutes until golden and fragrant. Transfer to a bowl to stop cooking.

    In the same small bowl, toss the toasted coconut with 1 tablespoon light brown sugar and 1 teaspoon melted butter until evenly coated. Sprinkle this crisp topping over each portion of the coconut layer just before serving to add texture.

Serving & Garnish

    If desired, grate 1 teaspoon fresh lime or lemon zest over the coconut for brightness and garnish each serving with a small sprig of mint. Serve warm or at room temperature.
