    Prepare butter

    Bring the unsalted butter to room temperature so it's soft but not greasy (about 20–30 minutes at room temp). Cut into 1/2-inch pieces to help quick and even creaming.

    Sift dry ingredients

    Sift the confectioners' sugar and unsweetened cocoa powder together into a medium bowl to remove lumps. This ensures a smooth buttercream.

    Beat butter

    In the bowl of a stand mixer fitted with the paddle attachment (or using a large mixing bowl and hand mixer), beat the softened butter on medium speed for 1–2 minutes until smooth and slightly paler.

    Add dry ingredients

    With the mixer on low, add the sifted powdered sugar and cocoa in three additions, scraping the bowl between additions. After each addition increase speed to medium and beat for 20–30 seconds until incorporated and fluffy. This prevents a sugar cloud and gives a silky texture.

    Melt and incorporate chocolate

    Place the finely chopped semisweet chocolate in a heatproof bowl. Microwave in 15-second bursts, stirring between bursts, until melted and smooth (or melt over a double boiler). Let the chocolate cool for 1–2 minutes until slightly warm but still fluid. With the mixer on low, stream the melted chocolate into the buttercream and beat until evenly combined.

    Adjust texture and flavor

    Add the heavy cream, vanilla extract, and a pinch of fine salt. Beat on medium-high for 30–60 seconds until light and creamy. If the buttercream is too thick, add hot water or additional cream 1 teaspoon at a time (up to 1 tablespoon) and beat until you reach desired spreading/piping consistency. If it's too thin, add up to 1/2 cup more sifted confectioners' sugar, 1–2 tablespoons at a time.

    Taste and finish

    Taste and adjust sweetness or chocolate intensity: add a pinch more salt to brighten, or 1–2 tablespoons more cocoa (sifted) for deeper chocolate flavor, beating to combine. Scrape the bowl and beat briefly to ensure even texture.

    Storage and use

    Use buttercream immediately to frost cooled cakes or cupcakes. For piping, transfer to a piping bag fitted with desired tip. Store leftover buttercream in an airtight container in the refrigerator for up to 5 days; bring to room temperature and rewhip before using. For longer storage, freeze up to 3 months; thaw overnight in refrigerator, then bring to room temp and rewhip.
