Fried Rice Base

Prepare ingredients
Break up any clumps in the chilled cooked jasmine rice so grains are separate. Shred or pull apart kalua pig into bite-size shreds. Finely dice the yellow onion. Slice green onions thinly, keeping whites and greens separate. Roughly chop the spinach if leaves are large. Beat the eggs lightly in a small bowl.

Heat wok or large skillet
Place a wok or large heavy skillet over medium-high heat. Add 1 tablespoon neutral oil and swirl to coat. When oil is shimmering (but not smoking), add the beaten eggs. Scramble quickly until just set, then transfer the eggs to a plate and set aside.

Cook aromatics & kalua pig
Add the remaining 1 tablespoon neutral oil to the wok and return to medium-high heat. Add diced yellow onion and the white parts of the green onions. Stir-fry 1–2 minutes until softened and translucent. Add the minced garlic and cook 20–30 seconds until fragrant. Add the shredded kalua pig and stir-fry 1–2 minutes to warm and allow edges to caramelize slightly.

Fry the rice
Increase heat to high. Add the chilled rice, breaking up any remaining clumps as you add it. Spread rice out across the pan for contact with the surface; let it sit 20–30 seconds then toss to get a light toast. Continue stir-frying about 2–3 minutes until rice is heated through and grains begin to have slight color.

Add spinach and finish
Add the chopped fresh spinach and the green parts of the green onions. Stir-fry 30–60 seconds until spinach is wilted but still bright green. Remove from heat and drizzle sesame oil over the rice; toss quickly to distribute.
Garnish & Serve

Transfer fried rice to a serving bowl or plates. Sprinkle toasted sesame seeds and extra sliced green onions on top. Add pickled ginger or crushed red pepper flakes if using. Serve immediately while hot.
