    Boil pasta

    Bring a large pot of salted water to a rolling boil (about 4–6 quarts/liters). Add 12 oz linguine and cook until al dente according to package directions, usually 8–10 minutes. Reserve 1 cup (240 ml) pasta cooking water, then drain the pasta and set aside.

    Prepare base sauce

    While pasta cooks, heat a large skillet over medium heat. Add 1 tablespoon olive oil and 3 tablespoons unsalted butter. When butter is melted, add 1 teaspoon minced garlic and sauté for 30–45 seconds until fragrant but not browned. Reduce heat to low and stir in 3 tablespoons heavy cream, 2 tablespoons milk, 1 teaspoon shoyu, 1 teaspoon mirin, 1 teaspoon salt, and 1/2 teaspoon black pepper. Keep the sauce warm on low; if it looks too thick, add 1–2 tablespoons of reserved pasta water to loosen.

    Prepare tarako

    If using whole tarako sacs: gently split each sac lengthwise with the tip of a knife and scrape the roe out with the back of a spoon into a small bowl. If using mentaiko, you can use as-is for spicy versions. Add 1 tablespoon unsalted butter, 1 tablespoon Japanese mayonnaise, and 1 teaspoon sake to the roe and mix until cohesive. For medium or hot options, add 1/2 tsp shichimi togarashi (medium) or 1 tsp gochujang or extra mentaiko (hot) and mix. Taste lightly — tarako is salty, so adjust salt in the pan sauce carefully.

    Warm tarako gently

    Put the tarako mixture into a small nonstick pan over very low heat for 30–45 seconds, stirring constantly, until it becomes fragrant and slightly thickened but not cooked into a dry paste. Remove from heat. This step awakens flavor and helps it emulsify with the butter/cream base.

Combine pasta and tarako

    Add the drained linguine into the skillet with the cream-butter base over low heat. Toss to coat, adding 2–4 tablespoons reserved pasta water as needed to create a glossy sauce that clings to the pasta.

    Remove the skillet from heat. Add the warmed tarako mixture to the pasta and quickly toss or fold with tongs until the roe is evenly distributed and the sauce is creamy. If the sauce needs loosening, add up to 2 more tablespoons of pasta water. Taste and adjust seasoning — add a pinch more salt or 1/4 teaspoon soy if needed (remember tarako is salty).

Garnish & serve

    Divide the tarako linguine among 4 plates (servings = 4).

    Top each portion with toasted and shredded Korean nori (1 sheet per plate, shredded), 1/2 tablespoon thinly sliced scallions, and a sprinkle of toasted sesame seeds.

    If desired, squeeze a quarter of the lemon over each portion for brightness and offer extra shichimi/gochujang on the side for heat. Serve immediately.
