    Clean clams

    Rinse clams under cold water. Soak in a bowl of cold salted water (about 4 cups water with 2 tsp salt) for 20–30 minutes to purge sand. Rinse again and discard any open clams that do not close when tapped.

    Reserve clam liquid

    Keep 1/2 cup of the soaking/cooking liquid by briefly steaming or simmering a few clams in 1/2 cup water until they open, then strain and reserve the liquid. This will be used to add briny flavor to the sauce.

Aromatics & Vegetables

    Prepare aromatics: peel and mince garlic, thinly slice the shallot, slice the Thai chili (remove seeds for milder heat), and cut scallions into 1" (2.5 cm) lengths. Roughly chop cilantro for garnish and set aside.

Sauce & Seasoning

    Make the sauce: In a small bowl combine oyster sauce (2 tbs), light soy sauce (1 tbs), fish sauce (1 tsp), rice wine (3 tbs), reserved clam liquid or water (1/2 cup), palm or brown sugar (1 tsp), and ground white pepper (1/4 tsp). Stir until sugar dissolves. Taste and adjust balance: it should be mildly salty, slightly sweet, and savory.

Cooking & Finishing

    Heat oil: In a wide sauté pan or wok over medium-high heat, add neutral oil (1 tbs). When hot, add minced garlic and sliced shallot. Stir-fry 30–45 seconds until fragrant and shallot begins to soften but not brown.

    Add chili and scallions: Add sliced Thai chili and half of the scallion pieces (reserve the other half for garnish). Stir 15 seconds to release aroma.

    Add clams and sauce: Increase heat to high, add the cleaned clams to the pan, pour the prepared sauce and reserved clam liquid over them. Immediately cover the pan with a tight-fitting lid.

    Steam clams: Steam for 4–6 minutes, shaking the pan once or twice, until most clams have opened. Discard any clams that remain firmly closed after 6 minutes.

    Finish sauce: Remove lid and reduce heat to medium. If sauce seems thin, simmer uncovered 1–2 minutes to slightly thicken and concentrate flavors. Stir gently to coat clams. Stir in sesame oil (1/2 tsp). Taste and adjust with a squeeze of lime or a pinch more sugar or fish sauce if needed.

    Serve: Transfer clams and sauce to a warm shallow bowl. Scatter reserved scallion pieces and chopped cilantro over the top. Serve immediately with lime wedges on the side and steamed rice or crusty bread to soak up the sauce.
