If using dried noodles, boil according to package until just al dente (usually 4–6 minutes). Drain and run under cold water to stop cooking; toss with 1 teaspoon oil to prevent sticking. If using fresh noodles, separate gently with hands.

Mix sauce in a small bowl: combine soy sauce (4 tbs), dark soy or kecap manis (1 tbs) if using, oyster sauce (2 tbs), sesame oil (1 tsp), sugar (1 tsp), black pepper (1 tsp), and salt (1/2 tsp). Stir until sugar dissolves.

Heat the wok/pan
Place a large wok or heavy large skillet over high heat. When hot, add 2 tablespoons vegetable oil and swirl to coat.

Add minced garlic and ginger and stir-fry quickly (10–15 seconds) until fragrant but not browned.

Push the vegetables to one side of the wok. If using raw shrimp, add 1/2 tablespoon oil to cleared side and add shrimp, cooking until just opaque (about 1–2 minutes). If using pre-cooked proteins (char siu or chicken), add them now to warm through for 30–60 seconds.

Add shredded cabbage and bean sprouts (if using). Stir everything together for 30–45 seconds so cabbage wilts slightly.

Drizzle the prepared sauce over the noodles. Toss and stir-fry vigorously with a spatula or tongs for 1–2 minutes until noodles are evenly coated and heated through. Add remaining 1 tablespoon oil if noodles look dry — the dish should be glossy and slightly oily for the classic 'greasy' texture.

Taste and adjust seasoning: add a pinch more salt, soy, or a splash of sesame oil if desired. If you want heat, stir in chili flakes or sriracha to taste.

Turn off heat and fold in sliced scallions. Transfer noodles to a serving platter.

Garnish with toasted sesame seeds, extra scallions, and lime wedges on the side. Serve immediately while hot and slightly greasy for authentic island-style flavor.
