Alfredo Sauce
Dynamite Shrimp
Method
Alfredo Sauce
- 1
- 2
Make roux and add dairy
Sprinkle 1 teaspoon flour over the mushroom mixture and stir for 30 seconds to cook the raw flour taste. Slowly pour in 1 cup whole milk while stirring to avoid lumps, then add 1 cup heavy cream. Bring the mixture to a gentle simmer over medium-low heat.
- 3
Thicken and season
Simmer the sauce, stirring occasionally, until it thickens slightly, about 5 minutes. Stir in 3 tablespoons grated Parmesan until melted. Season with 1 teaspoon salt, 1 teaspoon black pepper, and 1/2 teaspoon Italian seasoning. Taste and adjust seasoning as needed.
- 4
Finish sauce
Remove from heat and stir in 1 tablespoon chopped fresh parsley. Keep the sauce warm while preparing the shrimp. If the sauce becomes too thick, thin with up to 2 tablespoons milk.
Dynamite Shrimp
- 5
Prep shrimp
Pat 12 large peeled and deveined shrimp dry with paper towels. Season lightly with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- 6
Dredge
In a shallow bowl combine 1/2 cup all-purpose flour and 1/4 cup cornstarch. Dredge each shrimp in the flour mixture, shaking off excess.
- 7
- 8
Make dynamite sauce
In a small bowl, whisk together 1/2 cup mayonnaise, 2 tablespoons Sriracha, 1 tablespoon honey, and 1 teaspoon lime juice until smooth. Taste and adjust spice or sweetness to your preference.
- 9
Toss shrimp in sauce
Place the fried shrimp in a mixing bowl and pour the dynamite sauce over them. Gently toss until each shrimp is evenly coated.
- 10
Plate and garnish
Spoon a generous ladle of the white garlic mushroom Alfredo sauce onto each plate. Arrange the coated dynamite shrimp atop the sauce. Sprinkle with 2 tablespoons sliced green onions and 1 teaspoon sesame seeds if using. Serve immediately so shrimp stay crisp against the creamy sauce.
