Method
Crab Cakes

Prepare crab meat
Place the picked-over blue crab meat in a large bowl. Gently check for and remove any small pieces of shell or cartilage.

Make crab cake binder
In a separate small bowl whisk together mayonnaise, Dijon mustard, 1 whole beaten egg, Worcestershire sauce, lemon zest, Old Bay (or seafood seasoning), salt and pepper until smooth. Stir in chopped parsley and sliced green onion.

Combine crab mixture
Add the binder to the bowl with the crab meat and gently fold in 3 oz plain breadcrumbs (measured above) with a rubber spatula or your hands until mixture holds together. Avoid overmixing to keep lumps of crab intact.

Form cakes
Divide the mixture into 2 equal portions (for 2 large crab cakes). Using lightly oiled hands, shape each portion into a compact patty about 3/4 to 1 inch thick and roughly 3–3.5 inches across. Place formed cakes on a tray and chill in the refrigerator for 20–30 minutes to firm up (this helps them hold during cooking).

Set up breading station
Arrange three shallow dishes: one with the all-purpose flour, one with the beaten egg (beat until smooth), and one with panko breadcrumbs. Season the panko lightly with a pinch of salt and pepper.

Bread the cakes
Remove chilled cakes. Dredge each cake first in flour, tapping off excess, then dip into the beaten egg, and finally press into panko breadcrumbs to coat evenly. Ensure edges are well coated so they stay intact while frying.

Pan-fry
Heat a large skillet over medium heat. Add vegetable oil and butter (if using) and heat until shimmering but not smoking. Carefully place the breaded crab cakes in the pan (do not overcrowd — cook in a single layer). Fry 3–4 minutes per side, gently pressing slightly with a spatula for even contact, until golden brown and crisp. Internal temperature should be 145°F (63°C) if measured. If the cakes brown too quickly, reduce heat slightly and finish cooking through.

Drain and rest
Transfer cooked crab cakes to a paper towel–lined plate to drain briefly, then keep warm in a low oven (200°F / 95°C) if making ahead.
Sweet Chili & Chinese Mustard Drizzle

Combine sweet chili sauce, Chinese hot mustard, rice vinegar, honey and sesame oil in a small bowl. Whisk until smooth. Taste and adjust balance — add a teaspoon of water to thin if the mixture is too thick for drizzling. The sauce should be slightly sweet, tangy and with a sharp mustard bite.

Transfer the drizzle to a squeeze bottle or small spoon for controlled application. If you prefer a smoother texture, pass the sauce through a fine mesh strainer or pulse briefly in a blender.
