Preheat and prepare
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly oil it.

Toss bread
In a medium bowl, toss the cubed bread with 2 tbsp olive oil, 1/2 tsp garlic powder, and 1/4 tsp salt until evenly coated.

Bake
Spread the bread cubes in a single layer on the prepared sheet. Bake for 10–12 minutes, stirring once halfway through, until golden brown and crunchy. Remove from oven and let cool.
House-made Caesar dressing

Combine base ingredients
In a medium bowl, whisk together 1 cup mayonnaise, 2 tbsp extra-virgin olive oil, 2 tbsp fresh lemon juice, 1 tsp Dijon mustard, and 1 tsp Worcestershire sauce until smooth.

Add flavor components
Stir in the finely chopped anchovy fillets (or anchovy paste), minced garlic clove, 4 tbsp freshly grated Parmesan, 1 tsp red wine vinegar, 1 tsp freshly ground black pepper, and 1/2 tsp kosher salt. Taste and adjust acidity or salt: add up to 1 tsp more lemon juice or 1/4 tsp additional salt if desired.

Rest and chill
Cover and refrigerate the dressing for at least 15 minutes to let flavors meld. If the dressing is too thick, whisk in up to 1–2 tsp cold water to reach desired consistency before serving.
Salad assembly

Prep lettuce
Dry the torn Romaine thoroughly (use a salad spinner or pat dry). Place 6 cups of Romaine hearts in a large chilled salad bowl.

Dress the salad
Add about 3–4 tbsp of the house-made Caesar dressing to the lettuce and toss gently to coat. Add more dressing, 1 tbsp at a time, until leaves are evenly coated but not soggy (about 4–6 tbsp total, or to taste).

Add croutons and cheese
Sprinkle the cooled croutons (1 cup) and 3 tbsp freshly grated Parmesan over the dressed lettuce. Toss lightly to combine.

Finish and serve
Season to taste with freshly ground black pepper and additional salt if needed. Serve immediately, passing extra dressing and grated Parmesan at the table.
