Preparation

Prepare the Beef

Finely chop the beef tenderloin into small cubes or mince it using a sharp knife. Place it in a mixing bowl.

Prepare the Asian Pear

Peel the asian pear, remove the core, and finely dice it. Set aside in a small bowl.

Prepare the Natto

Open the natto package and stir it well to mix with its sauce. It should become slightly sticky.

Prepare the Sauce

In a small bowl, combine soy sauce, sesame oil, wasabi, and chopped green onions. Mix well.

Assembly

Combine Ingredients

In the mixing bowl with the chopped beef, add the diced asian pear, natto, and the prepared sauce. Gently mix until all ingredients are well combined.

Plate the Yukke

Using a ring mold (or your hands), shape the beef mixture onto a plate.

Add Egg Yolk and Caviar

Carefully place the egg yolks on top of the beef mixture. Garnish with caviar around the yolks.
