Prepare the Tofu
Slice the smoked tofu into thin strips (about 1/4 inch thick). This will help the tofu absorb the flavors of the dressing and allow for a more enjoyable texture.
Make the Black Garlic Chili Oil
In a small saucepan, heat the chili oil over low heat. Add the black garlic cloves (whole or chopped) and cook gently for about 5 minutes, allowing the garlic to infuse its flavor into the oil. Set aside to cool.
Prepare the Ponzu Sauce
In a bowl, mix together the black vinegar, soy sauce, and lime juice. Stir well to combine. This will be the ponzu sauce that enhances the flavors of the tofu.
Assemble the Dish
